Cashew Power Balls

cashew balls 2If you’re looking for a power snack that everyone in the family will enjoy, you’ve landed in the right place.  My 3 year old girls love these and when I’m ready to eat one, I have to make sure that they don’t see me :-).  These balls are made from a few simple nutritious ingredients and are loaded with protein and just the right amount of sweetness.

Ingredients

4 soft pitted dates*

1 cup raw cashews

1 cup unsweetened shredded coconut

1/2 teaspoon pure vanilla

2 tablespoons cashew butter

a pinch of salt

You will need soft dates for this recipe.  If your dates are dry, soak them in hot water for 15 minutes.  Slice each date into four pieces.  Add the sliced dates to a food processor and pulse a few times until the dates are visibly broken into smaller pieces,.  Add the cashews and pulse a few more times.  Add the cashew butter, coconut, vanilla and salt.  Blend until the mixture is uniform (for about a minute).  Remove from the food processor one teaspoon at a time and form into balls with your hands.  Chill for at least an hour.  (You can enjoy them immediately after making them, but they’re much better when they have been chilled and have hardened.)  Enjoy!

* If your dates have pits, use a serrated knife to carefully cut down the middle and remove each pit.
